2 cups all-purpose flour 1 cup finely chpd. dates
¼ cup sugar ½ cup “ “ pecans
1 tsp. baking powder 1 cup milk
1 tsp. salt ¼ cup melted butter
1 egg or oil
Grease and flour muffin cups. Preheat oven to 375 degrees. Sift flour and add dry ingredients into medium bowl. Beat egg and milk; mix well. Melt butter or use oil. Make a well in center of dry ingredients, slowly pour milk mixture, butter and stir with wisk; add dates and nuts. Spoon batter into muffin pans, about ¾ full, and bake until golden brown, 20-25 minutes for large ones and about 12-15 minutes for mini muffins. Makes about 12 large muffins or 24 mini muffins
